Short answer
A sponge wedding cake stays fresh for two to three days when kept cool and covered. Fruit cakes can stay fresh for weeks or even months if stored properly.
Sponge cakes with buttercream are best eaten within two to three days of baking. After that, they can dry out or the filling can spoil. Cakes with fresh cream, custard or fruit should be eaten within 24 hours, and kept in the fridge until just before serving. Buttercream cakes can sit at room temperature for a day or two, but keep them out of direct sunlight. Fruit cakes, especially those fed with alcohol, keep exceptionally well. Wrapped tightly in greaseproof paper and foil, they can stay fresh for several weeks or months. Many couples keep the top tier to eat on their first anniversary, though this is only a good idea for fruit cake, not sponge. If you have leftover cake, store it in an airtight container in a cool place, and eat within a few days. You can also freeze slices of sponge cake for up to a month, though the texture may change slightly. Always follow your baker's storage advice, as ingredients and fillings make a big difference.
