Short answer
Ask your partner what specifically is stressing them, then take one of those tasks off their list completely and do it without asking for instructions.
The best support is practical and specific. Sit down together and ask: "Which part of planning is weighing on you most?" It might be the guest list, the budget, or chasing suppliers. Listen without jumping in to fix it. Then choose one task from that list and take it over entirely. For example, if they are stressed about the menu, you contact the caterer, arrange the tasting, and report back with two options. Do not ask them to remind you or check your work.
Also protect their downtime. Plan a few evenings or a full day with no wedding talk at all. Cook dinner, watch something, go for a walk. Stress builds when planning becomes the only thing you talk about. You can also set a rule that wedding decisions are only made together, so neither of you feels responsible for everything alone.
If your partner is overwhelmed by choices, help them narrow things down. Give them two or three options instead of ten. Say things like "I've shortlisted these three venues, which do you prefer?" That reduces decision fatigue. And remember to thank them for the work they have done. A simple "I appreciate you sorting the invites" goes a long way.
