Short answer
Freeze drying is costly, takes time, and needs professional equipment. It can make petals slightly translucent or brittle, and not all flowers preserve well. You must deliver the bouquet quickly, and the result is not guaranteed to look exactly like fresh flowers, though it is usually better than air drying.
The main disadvantage is cost and access. Professional freeze drying is more expensive than air drying or silica gel, and not every town has a service. You may need to post your bouquet or travel, which adds hassle. The process also takes weeks, sometimes months, so you cannot have your bouquet back immediately.
Another issue is that freeze drying is not perfect for every flower. Delicate petals can become translucent or slightly papery, and some colours fade a little. The flowers may also be more fragile than they look, so handling them for display requires care. You need to give the bouquet to the service within a few days of the wedding, which can be stressful if you are going on honeymoon or have a long celebration.
There is also a risk that the result does not meet your expectations. While freeze drying preserves shape well, it is not a magic fix. If the bouquet was already wilting or damaged, it will not recover. You also need to store the preserved bouquet away from humidity and sunlight, or it can spoil over time. Finally, the service may have a minimum order or only accept whole bouquets, so you cannot preserve just a few stems. Weigh these factors against the beauty of a freeze-dried keepsake.
